Sweet Potato Croquettes

Equipment:
  • Cookie Sheet 13" x 19" (OR Aluminized Steel Cookie Sheet, Commercial Grade Pure Aluminum Cookie Sheet, Cookie Sheet 13", 15", 17")
  • Mixing Bowls
  • 2-1 Scraper & Spatula 10"
  • Brush and Spatula Set
  • 4pcs Measuring Cups with Scraper
Ingredients:
  • 3 cups mashed sweet potatoes
  • 1/4 cup milk
  • 1/2 cup grated cheddar cheese or Parmesan cheese
  • 1/4 cup chopped cooked ham or vegetables
  • 1/4 cup chopped green onions
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper (ground)
  • 2 cups of breadcrumbs

Instructions:

  1. Combine mashed sweet potatoes, milk, cheese, ham, green onions, paprika, salt, and pepper. Thoroughly mix until smooth.
  2. To prepare homemade mashed sweet potatoes, place peeled sweet potatoes in a large pot of boiling water and simmer until tender, approximately 25 minutes. Drain well and mash using a potato masher.
  3. Take approximately 2 tablespoons of the potato mixture at a time and shape them into balls resembling meatballs, using your hands. Alternatively, an ice cream scoop can be used to create uniform balls.
  4. Place breadcrumbs in a large bowl or shallow plate. Dip the mashed potato balls into the breadcrumbs, ensuring they are evenly coated by gently pressing the crumbs onto the surface.
  5. Arrange the mashed potato balls evenly on a baking sheet lined with parchment paper, and place them in the freezer. Allow them to freeze for 15-20 minutes to firm up, which will help the croquettes maintain their shape during cooking.
  6. Once they've cooled, preheat oven to 375F. Then put the croquettes evenly on parchment paper on top of the baking sheet/cookie sheet. Gently drizzle the top with cooking oil to coat.
  7. Bake for 20 minutes until the crust becomes golden brown.
