Ingredients
- 1Â and 1/2 cups milk
- 3Â eggs
- 3 and 1/4 cups whole rolled oats
- 1/3 cup ground flaxseed
- 1 teaspoon baking powder
- 1/2 cup maple syrup
- 1/2 cup applesauce
- 1/2 cup butter
- 1/4 teaspoon salt
- 3/4 cup mini chocolate chips
- 1 teaspoon cinnamon spice
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F and coat a muffin pan with nonstick spray. If using muffin liners, it's advisable to skip them as the oatmeal cups tend to stick.
- In a large bowl, combine all the ingredients except for the chocolate chips. Gently fold in the chocolate chips using a spoon or rubber spatula. The batter will have a slightly runny consistency.
- Spoon the batter evenly into the muffin cups, ensuring that both the oats and liquid are distributed in each cup. Fill the cups to the brim.
- Bake for around 28-30 minutes, or until the edges turn lightly golden and the tops appear set. If the tops brown too quickly, cover the muffin pan with a piece of aluminum foil.
- Allow the oatmeal cups to cool for 5-10 minutes before serving.
